Ingredients
- 500g potato gnocchi
- 5 tbsp basil pesto
- 150g sun-dried tomatoes, drained and chopped
- 50g Parmesan, grated
- 30g toasted pine nuts
Steps
- Boil gnocchi in salted water until it floats. Drain.
- Sear the gnocchi in olive oil or butter until lightly browned.
- Add tomatoes and cook for 1–2 minutes.
- Stir in pesto and a splash of pasta water to loosen.
- Top with parmesan and toasted pine nuts.
