This one might be called “marry me”…, but honestly, it’s so good, you might not want to share it.
It’s cosy, creamy, and the kind of meal that feels like a small win at the end of a long day. Best of all, it only uses one pan!
Portion sizes are calculated for one person across five days of the week.
Ingredients
1 tin of butter beans (drained)
1 red onion
2 cloves of garlic
1 jar of sun-dried tomatoes
200ml double cream
Steps
1. Fry finely chopped onion in a little oil with a pinch of salt until soft.
2. Stir in garlic and chopped sun-dried tomatoes.
3. Add the drained butter beans and stir to coat everything.
4. Pour in the double cream, plus a small splash of water.
5. Let it simmer gently and season to taste.
Make it your own:
• Throw in a handful of spinach for some greens
• Add chilli flakes if you want a bit of heat
• Serve with crusty bread or crispy garlic bread for extra comfort
