Sweet Potato Chilli. 5 steps. 5 ingredients. 5 days.

Ingredients 

  • 2 medium sweet potatoes, peeled and cubed 
  • 400g canned chopped tomatoes (1 tin) 
  • 400g canned black beans, drained and rinsed 
  • 2 onions, chopped 
  • 2 tsp chilli powder 

Steps 

  1. Roast cubed sweet potato until soft. 
  2. Cook chopped onion in a pan until softened. 
  3. Stir in chilli powder. 
  4. Add canned tomatoes and black beans. 
  5. Fold in roasted sweet potato and simmer. 

Divide into containers for five easy dinners.
